If you have a sweet riesling or a fruit wine hanging about and are unsure of what to do with it, try this recipe. You can use any flavor fruit wine and any sweet wine will also work.
CUPCAKES
1 3/4 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
12 cup softened butter (if salted no need to add salt)
pinch of salt
1 cup sugar
2 large eggs at room temperature
2 tsp vanilla bean past or pure vanilla extract
1/2 cup greek yogurt
1/2 cup sweet wine
Preheat oven 350 F
1. Mix dry ingredients and set aside
2. Cream butter and sugar
3. Beat in eggs separately and vanilla
4. Whisk yogurt and wine in a small bowl until combined
5. Now mix dry and wet into the batter, by alternating dry, wet, dry, wet until combined
6. Bake 18-22 minutes depending on oven
FROSTING
Remainder of wine
1/2 cup softened butter, salted
2+ cups powdered sugar, sifted
1/4 cup jam (strawberry, raspberry and currant work best)
1. Reduce the wine by 3/4 over medium heat, stir often adn cool completely
2. Cream butter and 1/2 the sugar
3. Add 1/4 cup of reduced wine
4. Add jam
5. Add more sugar slowly until the desired consistency
Glaze the cupcake tops with reduced wine, then core cupcakes and add extra jam into each before frosting.
Now try to not eat them all in a day!
